We’re taking the timeless "something blue" tradition and giving it a sophisticated coastal twist! As a native Floridian and lifelong beach lover, I wanted to design a set that proves the beach scene can be incredibly elegant. This class is all about bringing that airy, seaside vibe to your wedding cookie sets with a soft, romantic touch.

In this 4-cookie class, we’ll dive into the textures and 3D details that make high-end bridal cookies truly stand out. We will be working with a muted, calming color palette, but don’t let the soft colors fool you—the techniques you’ll master here are powerful, versatile, and designed to give you the confidence to tackle any wedding set that comes your way.

Piping Florals
The centerpiece of this set is definitely the hibiscus. Working with stiff consistency royal icing and piping tips is a skill that every decorator loves to have in their toolkit. We’ll break down the process together step-by-step, taking the mystery out of floral piping, so you can create lush, dimensional flowers that look like they’ve just bloomed.

We’ll cover how to sculpt royal icing, create a quick and easy iridescent effect, and add texture using dimensional piping. Have you ever wanted to defy gravity with your cookies? Join me in learning how to create this truly gravity defying ghostly cookie! Together we will learn how to bring 3d concepts to life, shaping and sculpting cookies in an entirely new way. Let me share all of my color mixing secrets with you! In this hands-on class, we’ll unravel the mystery of the color wheel and show you that there truly is no color you can’t mix. We’ll cover the science of color in an easy-to-understand way, then put it into practice with techniques and tips tailored specifically for icing. You’ll create your own custom color wheel by mixing every shade yourself, building confidence along the way. We’ll wrap things up with a fun color mixing challenge… and yes, there will be prizes!

Intermediate/Advanced

The simple joy of nature. The comfort of a warm drink. The relaxation from a good massage. Self-care is important for the mind and body, and decorating cookies can be a purposeful activity of mindfulness amidst a hectic world. In this hands-on cookie decorating class, we’ll pay homage to some popular sources of serenity by creating a beautiful flower bouquet, a calm cup of tea, and spa hot stones.

In “Sweet Zen” we’ll be using a multitude of decorating techniques to create these charming cookies, all of which can be applied to endless other cookie designs. However, students should have a solid foundation of basic icing skills (piping and flooding) prior to class. Once at home, the decorating excitement can continue! You’ll have access to a class workbook with templates, supply lists, and a review of each part of the designs.

Do you struggle with getting the right consistency when decorating your own cookies at home? Do you wonder how to get that beautiful, shiny, and puffy icing each time you decorate? Having all the cookie tools is not always beneficial if you don’t have the fundamentals of icing consistency and piping. In this class, we’ll focus on florals and spend the drying time adding details to the cookie.

New to Procreate or feeling overwhelmed by it? This beginner-friendly class breaks Procreate down into easy, non-intimidating steps specifically for cookie decorators. Hands-on decorating workshop for intermediate–advanced cookie decorators focused on creating practical, cookie-scale flowers that can be realistically used on everyday cookie designs. Students will decorate all cookies shown in the project photo, working step-by-step alongside the instructor with guided, real-time instruction while using multiple royal icing consistencies and royal icing transfers to add dimension.

In class, students will create royal icing flowers sized specifically for regular-size cookies, including tiny peonies and four-petal flowers, using multiple piping tips. Instruction will focus on consistency control, decorating order, and technique selection to achieve dimension while keeping designs efficient and repeatable. Students will also learn how to create make-ahead royal icing flowers for production-style decorating.

In this advanced, all-day workshop we will create each layer and element by painting, piping, stamping, sculpting together through each technique and detail as we imbue our flora and fauna with life.

Join me in this class geared towards teaching you how to seamlessly use Eddie in your everyday cookie orders, not just logos or cheesy background prints. You will be grouped at tables with an Eddie right in front of you for HANDS ON training - at least 5 Eddies in our classroom. This intermediate-level class is designed for cookiers who already know the basics of Procreate and want to digitally design complete cookie sets more efficiently and intentionally. The class moves at an intermediate pace and assumes you are already comfortable with core Procreate tools (see prerequisites below).

You’ll design a cookie set in class while diving deeper into core concepts such as color palettes, text, cookie shapes, and the Reference Tool, along with practical food-coloring mixing theory to help you match your on-screen colors in icing. We’ll also cover advanced techniques including adding digital paper to your designs, drawing guides, blending modes, seamless patterns, printing prep for Eddie, and creating 3D cutters from your designs.

This is a digital design class only. We will not be physically decorating cookies or mixing icing.

Can I take both classes?
Yes, the Beginner class is designed to fully prepare you for the Intermediate class. If you choose to take both, you may notice some intentional overlap - this is meant to reinforce core skills while building confidence as you move into more advanced concepts. If you choose not to take the Beginner class, you should already be comfortable with all of the Intermediate class prerequisites to ensure you’ll be successful.

Hands-on decorating workshop for intermediate–advanced cookie decorators focused on creating practical, cookie-scale flowers that can be realistically used on everyday cookie designs. Students will decorate all cookies shown in the project photo, working step-by-step alongside the instructor with guided, real-time instruction while using multiple royal icing consistencies and royal icing transfers to add dimension.

In class, students will create royal icing flowers sized specifically for regular-size cookies, including tiny peonies and four-petal flowers, using multiple piping tips. This class is a perfect add-on if you’re hoping to learn or advance your royal icing flower skills. In this class, we’ll focus on florals and spend the drying time adding details to the cookie.

We’ll pipe multiple blooms of 4 different floral varieties: Large and small ruffle flowers, Peonies, Anemones, and Star flowers. We'll also learn to create different centers for these blooms

While the flowers are drying, we'll be painting and adding 3-D piped vines, coral, and greenery to your cookie. We'll also be painting the shell with metallic luster dust and dry dusting some of the flowers to add color.

Marzipan in Cookie Decorating (Thur PM)

Marzipan is used in Europe to decorate cakes, fill candies or create individual sweet treats. It can be used for most applications people use fondant in the USA, but it's healthier and tastes way better.

In this class, we will make marzipan from scratch, we will learn how to color marzipan and use it for different applications. We will decorate 4 cookies with marzipan, using different techniques.

There is no prerequisite for this class, all skill levels are welcome.

In this four hour class, we will show you step by step how to create this work of art - all you need is some basic cookie knowledge. Flowers by the Sea (Thur PM)

Please note, we will be piping with thick floral icing for a good portion of this class, which takes significant hand strength. If you have arthritis or any other hand issues, this may not be the right class for you.

This class is a perfect add-on if you’re hoping to learn or advance your royal icing flower skills. In this class, we’ll focus on florals and spend the drying time adding details to the cookie.

We’ll pipe multiple blooms of 4 different floral varieties: Large and small ruffle flowers, Peonies, Anemones, and Star flowers. We'll also learn to create different centers for these blooms

While the flowers are drying, we'll be painting and adding 3-D piped vines, coral, and greenery to your cookie. We'll also be painting the shell with metallic luster dust and dry dusting some of the flowers to add color.

Love at First Bite (Thur PM)

Go from “cookier” to “cookie artist” in this step-by-step, guided workshop. You’ll see that portraiture doesn’t “bite,” with forgiving subject matter—no need to even make the eyes match. We’ll discuss portraiture secrets, realistic skin tones achieved with edible colors, blurring your brushstrokes, painting convincing reflections, and more. We’ll learn the tricks to working on a royal icing surface without dissolving it. Then, we’ll enhance the effect with a side-angled royal icing rose.

Prerequisites are feeling comfortable manipulating a detail paintbrush and squeezing stiff floral icing. Recommended for ages 13 and up, especially with artistic ability and/or enthusiasm! Class workbook, all materials, access to online painting demos, and a swag bag will be provided.
Eddie, That’s Amore (Thur PM)

Eddie has changed my cookie business for the better since 2022 and I love showing how to use technology to take your cookies to another level and take your TIME back! How many hours have you spent hand painting cookies for those perfect details?? Or mixing that perfect airbrush shade just to spill it all over the place?? What if I told you STOP! Just print it.

Join me in this class geared towards teaching you how to seamlessly use Eddie in your everyday cookie orders, not just logos or cheesy background prints. You will be grouped at tables with an Eddie right in front of you for HANDS ON training - at least 5 Eddies in our classroom. We will have both Mac computers and PC computers running with Eddie so both groups are welcome.

In this class we will:
  • Start with blank cookies - print and detail the above group of cookies
  • Learn to find graphics or make graphics to your liking
  • Make and print on icing transfers
  • Learn to print on normal shapes and custom shapes with Eddie

Procreate Baby Steps-Intermediate Level (Thur PM) NOTE: This class is currently sold out

This intermediate-level class is designed for cookiers who already know the basics of Procreate and want to digitally design complete cookie sets more efficiently and intentionally. The class moves at an intermediate pace and assumes you are already comfortable with core Procreate tools (see prerequisites below).

You’ll design a cookie set in class while diving deeper into core concepts such as color palettes, text, cookie shapes, and the Reference Tool, along with practical food-coloring mixing theory to help you match your on-screen colors in icing. We’ll also cover advanced techniques including adding digital paper to your designs, drawing guides, blending modes, seamless patterns, printing prep for Eddie, and creating 3D cutters from your designs.

This is a digital design class only. We will not be physically decorating cookies or mixing icing.

FAQ:
Can I take both classes?
Yes, the Beginner class is designed to fully prepare you for the Intermediate class. If you choose to take both, you may notice some intentional overlap - this is meant to reinforce core skills while building confidence as you move into more advanced concepts. If you choose not to take the Beginner class, you should already be comfortable with all of the Intermediate class prerequisites to ensure you’ll be successful.
Persnickety Puffed And Pressure Piped Florals (Thur PM)

Hydrangea Garden Cookies (Thur PM)

Prerequisite: Minimal skills are required, however, this is a fast-paced class therefore, basic outlining and flooding skills are needed. You don’t need prior experience in florals or mixed media.

Love florals, texture, and artistic cookie design? This hands-on class explores a hydrangea-themed cookie set designed to help decorators elevate their work through dimension, mixed media, and refined techniques.

Students will decorate three cookies total:
  • Hydrangea flower cookie
  • Seed packet cookie
  • Garden trowel cookie
This class is ideal for decorators who want to move beyond flat designs and build cookies that feel layered, intentional, and visually impactful. Students will work with a wide range of edible mediums, including moldable royal icing, edible lace, and multiple types of edible paper to create depth, texture, and realistic detail. Techniques taught include structured floral construction, hand-painting, watercolor effects, realistic wood-grain texture, and layered mixed-media application.

By the end of class, students will have a stronger understanding of how to combine multiple techniques within a single cohesive set, making their designs more dynamic, elevated, and adaptable for future projects, classes, or client work. Instruction is guided step by step, with a focus on artistic decision-making and technique control.

What’s Included: All cookies, icing, tools, and supplies needed to complete the three-cookie project are provided. Students will take home their finished cookie set.

Hands-on decorating workshop for intermediate-advanced cookie decorators looking to elevate their skills with royal icing transfers, simple bows, textured elements, simple royal icing flowers, and a deeper understanding of multiple icing consistencies. Students will decorate all cookies shown in the project photo, working step-by-step alongside the instructor.

In class, students will focus on creating and applying delicate royal icing transfers, building depth with layered textures, and forming simple, efficient bows suitable for everyday cookie designs. Students will also learn simple four-petal flowers using metal piping tips, which can be scaled and reused across a variety of styles. Emphasis will be placed on royal icing consistency control, decorating order, and technique selection for polished, repeatable results.
